Ingredients

  • 2 c. plain cornmeal
  • 1 1/2 Tbsp. salt
  • 1/2 c. shortening or cooking oil
  • black pepper to taste

Instructions

  1. Wash the green tomatoes and pat them dry.
  2. Cut the tomatoes into 1/4-inch slices and sprinkle with salt and pepper.
  3. Dip each tomato slice in cornmeal, ensuring it is evenly coated, then lay aside on waxed paper.
  4. Heat the shortening or cooking oil in a skillet over medium heat.
  5. Fry the coated tomato slices until they are golden brown on both sides.
  6. Drain the fried tomatoes on paper towels.
  7. Serve hot.
