Ingredients

  • 1/2 to 2/3 cup quick grits
  • water
  • 1 egg
  • 1 tablespoon flour

Instructions

  1. Cook the quick grits in four times as much water until boiling and thickened.
  2. Stir in a heaping tablespoon of flour and remove from heat.
  3. Stir in the egg thoroughly into the grits mixture.
  4. Add just enough water to achieve a pancake batter consistency.
  5. Spoon the batter into hot (375°F) grease in small pancake size portions.
  6. Brown on both sides until golden and crispy.
