Fried Peach Pieces

- Place peaches in a bowl; sprinkle 1/2 cup sugar over peaches and set aside for about 1 hour.
- Place peaches, 1/2 cup water, and 1/2 cup sugar in a saucepan.
- Cook peaches over medium heat until they reach pie filling consistency, stirring occasionally.
- If necessary, add 1 or 2 tablespoons of cornstarch to thicken the filling.
- In a mixing bowl, place 3 cups of self-rising flour; cut in 6 tablespoons of shortening with a fork until mixture resembles coarse crumbs.
- Slowly add 1 1/2 cups of cold water, mixing until dough forms.
- Turn dough out onto a floured board and roll out to about 1/4-inch thickness, roughly the size of a saucer.
- Spoon 3 to 4 tablespoons of peach filling onto each round of dough.
- Fold the dough over the filling and flute the edges with a fork to seal.
- Heat vegetable oil in an electric skillet to between 300° and 325°F.
- Fry the peach pies until golden brown on both sides, about 3-4 minutes per side.
