Fried Red Snapper

Ingredients

  • 3 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 snapper fillets (about 2 1/4 pounds)
  • 1 cup finely crushed crackers
  • 1 1/2 cups shortening or lard
  • Lemon wedges
  • Cocktail sauce or tartar sauce

Instructions

  1. Combine eggs, salt, and pepper in a medium mixing bowl. Dip fish in egg mixture; roll in crushed crackers. Fry in hot shortening in a large heavy skillet until golden brown, turning once. Drain well. Garnish with lemon wedges, and serve with cocktail or tartar sauce.
