Ingredients

  • 6 softshell crabs, cleaned and dressed
  • 4 eggs
  • salt to taste
  • pepper to taste
  • flour

Instructions

  1. Wash crabs but do not dry.
  2. Whisk eggs, salt, and pepper until fluffy and set aside.
  3. Heat oil in a large skillet over medium-high heat.
  4. Dip each crab in flour, then in the egg mixture.
  5. Fry the crabs in hot oil for 3 to 4 minutes on each side until golden brown.
  6. Drain on paper towels.
  7. Serve on a platter with lemon wedges, if desired.
