Ingredients

  • 4 to 6 yellow squash
  • 1/2 cup cornmeal
  • 1/2 cup flour
  • salt to taste

Instructions

  1. Heat 2 inches of oil in a skillet over medium heat.
  2. Wash and slice the squash about 1/4 inch thick, keeping them moist.
  3. Place the dry ingredients (cornmeal, flour, salt, and pepper) in a paper bag.
  4. Add a handful of sliced squash to the bag and shake well to coat.
  5. Fry the coated squash in hot oil until golden brown.
  6. Drain well on paper towels and serve hot.
