Ingredients

  • 1 wild turkey breast, cut into 1 1/2-inch strips
  • 2 eggs, well beaten
  • evaporated milk (enough to make a thin batter)

Instructions

  1. Dip the turkey breast strips into the beaten eggs and then roll them in flour.
  2. Fry the coated turkey strips in an electric fryer at approximately 200° to 225°F in cooking oil.
  3. Season with salt and pepper to taste.
  4. Cover and cook slowly, turning only once during cooking.
  5. Ensure a fork can easily be inserted into the turkey to confirm it is done.
