Ingredients

  • 5 (8 oz.) packages cream cheese, softened
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 1/2 teaspoons vanilla extract
  • Graham cracker crust

Instructions

  1. Beat cream cheese at high speed of an electric mixer until light and fluffy.
  2. Gradually add sugar; beat well.
  3. Add eggs, one at a time, and beat well after each addition.
  4. Stir in vanilla extract.
  5. Pour the mixture over the graham cracker crust in a 10-inch pan.
  6. Bake at 350°F for 40 minutes.
  7. Turn off the oven and partially open the oven door.
  8. Leave the cheesecake in the oven for 30 minutes.
  9. Remove from the oven and let cool on a wire rack in a draft-free place.
  10. Cover and chill for 8 hours before serving.
