Ingredients

  • 1 (16 oz.) package dry mixed beans
  • 2 quarts water
  • 1 lb. ham or sausage, diced
  • 1 large onion, diced
  • 1 garlic clove, minced
  • salt and pepper to taste
  • 1 (16 oz.) can tomatoes

Instructions

  1. Wash the dry mixed beans.
  2. Cover the beans with water and soak overnight.
  3. Drain the soaked beans.
  4. Add 2 quarts of water, diced ham or sausage, diced onion, minced garlic, salt, and pepper to a large pot.
  5. Cover and bring the mixture to a boil.
  6. Reduce heat and simmer for 2 to 3 hours until beans are tender.
  7. Add the canned tomatoes and chilies, then simmer for an additional 30 minutes, stirring occasionally.
