- Melt the oleo and add almond extract and toasted slivered almonds; mix well.
- Combine this mixture with crushed vanilla wafers.
- Press half of the wafer mixture into the bottom of a large (13 x 9-inch) oblong dish.
- Slice the vanilla ice cream and layer half over the wafer crust.
- Spread the entire jar of apricot preserves evenly over the ice cream layer.
- Add another layer of ice cream on top of the preserves.
