A luscious frozen apricot dessert layered with vanilla wafers, toasted almonds, and creamy ice cream, offering a perfect sweet treat for gatherings and special occasions.

Ingredients

  • 12 oz. vanilla wafers
  • 0.5 stick oleo
  • 1 tsp. almond extract
  • 2 pkg. slivered almonds toasted
  • 0.5 gal. vanilla ice cream
  • 2 lb. apricot preserves

Instructions

  1. Melt the oleo and add almond extract and toasted slivered almonds; mix well.
  2. Combine this mixture with crushed vanilla wafers.
  3. Press half of the wafer mixture into the bottom of a large (13 x 9-inch) oblong dish.
  4. Slice the vanilla ice cream and layer half over the wafer crust.
  5. Spread the entire jar of apricot preserves evenly over the ice cream layer.
  6. Add another layer of ice cream on top of the preserves.
  7. Sprinkle the remaining crushed wafers over the top.
  8. Freeze the dessert until firm.
  9. To serve, garnish with whipped cream.
