Ingredients

  • 1 large ripe avocado
  • 2 tablespoons lemon juice
  • 1 (3 oz.) package softened cream cheese
  • 1/4 cup mayonnaise
  • 1/4 teaspoon salt
  • 1 cup canned peaches or apricots, well drained
  • 1/4 cup maraschino cherries, drained and chopped
  • 1/2 cup whipping cream, whipped

Instructions

  1. Dice the avocado into a bowl.
  2. Sprinkle with 1 tablespoon of lemon juice.
  3. Blend the softened cream cheese with the remaining lemon juice, mayonnaise, and salt until smooth.
  4. Add the canned peaches or apricots and chopped maraschino cherries to the mixture.
  5. Fold in the whipped cream gently.
  6. Pour the mixture into a freezing tray and freeze for 6-8 hours.
  7. Let stand a few minutes before cutting into squares.
