- Peel the bananas and place them in a heavy plastic bag.
- Freeze the bananas for at least 6 hours.
- Remove from the freezer and cut each banana into 5 or 6 pieces.
- In a food processor fitted with a metal blade, process the banana pieces, ricotta cheese, skim milk, and ground nutmeg.
- Scrape the sides of the bowl as needed until the mixture is smooth and creamy.
