Ingredients

  • 2 qt. thinly sliced cucumbers (unpeeled)
  • 1 large onion, diced
  • 2 Tbsp. salt
  • 1 1/2 c. sugar

Instructions

  1. Place cucumbers, onion, and salt in a large bowl; cover with cold water.
  2. Let stand for 2 hours and then drain.
  3. Mix sugar with vinegar; pour over the cucumber mixture.
  4. Mix thoroughly to combine.
  5. Put into pint freezer containers, leaving 1/4-inch space at the top.
  6. Freeze until ready to serve.
