Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup low-sodium soy sauce
  • 2 tablespoons fresh lime juice
  • 6 cloves garlic, minced
  • 1 teaspoon crushed red pepper
  • 3/4 teaspoon curry powder
  • 2 (3 lb.) broiler-fryers, cut up and skinned
  • vegetable cooking spray

Instructions

  1. Combine brown sugar, soy sauce, lime juice, minced garlic, crushed red pepper, and curry powder in a heavy-duty zip-top plastic bag.
  2. Add chicken pieces to the bag, seal, and marinate in the refrigerator for at least 4 hours.
  3. Remove chicken from marinade, reserving the marinade.
  4. Bring the reserved marinade to a boil in a saucepan, then reduce heat and simmer for 3 minutes.
  5. Coat grill rack with vegetable cooking spray and preheat over medium-hot coals.
  6. Place chicken on the grill rack and cook, covered, for 20 to 25 minutes or until done, turning and basting frequently with the simmered marinade.

Tips & Substitutions

For a spicier kick, increase the crushed red pepper or add a dash of sriracha to the marinade. If you prefer a sweeter flavor, substitute some of the brown sugar with honey. Make sure to marinate the chicken for at least 4 hours, but overnight is even better for deeper flavor. For a vegetarian option, use tofu or portobello mushrooms instead of chicken.

Serving Suggestions

Serve the Thai Chicken Barbecue with jasmine rice or a fresh green salad for a light meal. It pairs wonderfully with a side of Kraft Macaroni And Cheese Salad for a comforting touch. Garnish with fresh cilantro and lime wedges for an extra burst of flavor. This dish is perfect for summer barbecues or family gatherings.

Storage & Reheating

Store any leftover barbecue chicken in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in a preheated oven at 350°F (175°C) for about 15-20 minutes, or until heated through. You can also reheat on the grill for a few minutes to crisp up the skin again.
