Ingredients

  • 2 cups crushed pineapple
  • 1 lb small curd cottage cheese
  • 2 cans Angel Flake coconut
  • 1/2 cup chopped nuts (pecans)
  • 2 tablespoons creamed horseradish
  • 1 cup light cream or half and half
  • 1 cup mayonnaise
  • 1 package lime Jell-O
  • 1 package lemon Jell-O

Instructions

  1. Dissolve the lime and lemon Jell-O in 2 cups of boiling water.
  2. Add the crushed pineapple (including syrup) and food coloring to the Jell-O mixture and cool until syrupy.
  3. Mix the small curd cottage cheese, crushed pineapple, coconut, chopped nuts, creamed horseradish, light cream or half and half, and mayonnaise in a large bowl.
  4. Add the cooled Jell-O mixture to the other ingredients and stir well.
  5. Refrigerate until the salad is set, about 2-3 hours.
