- Combine graham cracker crumbs, sugar, and melted margarine; press onto the bottom and sides of a 9-inch spring-form pan to make the crust.
- Combine sugar and cocoa powder, mixing well, and set aside.
- In a mixing bowl, whip softened cream cheeses, sugar, cocoa mixture, and vanilla with an electric mixer on medium until well blended.
- Blend in egg substitute until smooth.
- Pour the cream cheese mixture into the prepared crust.
- Bake at 375°F (190°C) for 30 minutes.
- Meanwhile, combine sour cream, sugar, and vanilla; carefully spread over the baked cheesecake.
- Bake at 425°F (220°C) for 10 minutes.
- Loosen the cake from the rim of the pan and let it cool.
- Remove the rim and chill the cheesecake before serving.
