Ingredients

  • 1 cup graham cracker crumbs
  • 3 tablespoons sugar
  • 2 tablespoons margarine melted
  • 1 (8 oz.) package light cream cheese
  • 1 (8 oz.) package fat-free cream cheese
  • 3/4 cup sugar
  • 1/3 cup cocoa
  • 1 teaspoon vanilla
  • 2/3 cup egg substitute

Instructions

  1. Combine graham cracker crumbs, sugar, and melted margarine; press onto the bottom and sides of a 9-inch spring-form pan to make the crust.
  2. Combine sugar and cocoa powder, mixing well, and set aside.
  3. In a mixing bowl, whip softened cream cheeses, sugar, cocoa mixture, and vanilla with an electric mixer on medium until well blended.
  4. Blend in egg substitute until smooth.
  5. Pour the cream cheese mixture into the prepared crust.
  6. Bake at 375°F (190°C) for 30 minutes.
  7. Meanwhile, combine sour cream, sugar, and vanilla; carefully spread over the baked cheesecake.
  8. Bake at 425°F (220°C) for 10 minutes.
  9. Loosen the cake from the rim of the pan and let it cool.
  10. Remove the rim and chill the cheesecake before serving.
