Frozen Mud Pie

A rich and creamy frozen dessert with chocolate cookie crust and swirled chocolate ice cream, perfect for warm days and entertaining chocolate lovers. Serves 8.

Ingredients

  • 1 1/2 cups crushed cream-filled chocolate sandwich cookies
  • 1 1/2 teaspoons sugar
  • 1/4 cup butter or margarine, melted
  • 2 pints chocolate chip or coffee ice cream, softened
  • 1/4 cup chocolate syrup
  • additional cream-filled chocolate sandwich cookies (optional)

Instructions

  1. In a bowl, combine crushed cookies and sugar.
  2. Stir in melted butter.
  3. Press the mixture onto the bottom and up the sides of an ungreased 9-inch pie plate.
  4. Refrigerate for 30 minutes.
  5. Spoon 1 pint of softened ice cream into the crust.
  6. Drizzle with half of the chocolate syrup.
  7. Swirl with a knife to create a marbled effect.
  8. Carefully top with the remaining ice cream.
  9. Drizzle with the remaining chocolate syrup.
  10. Swirl again with a knife.
  11. Cover and freeze until firm.
  12. Remove from the freezer 10 to 15 minutes before serving.
  13. Garnish with whole cookies, if desired.
