Ingredients

  • 2 qt. unpared, thinly sliced pickles
  • 1 large onion, diced or sliced
  • 1 1/2 c. sugar
  • 2 Tbsp. pickling salt
  • 1/2 c. cider vinegar

Instructions

  1. Mix pickles, onions, and salt in a large bowl.
  2. Cover with water and let stand for 2 hours.
  3. Drain the mixture.
  4. Mix sugar with vinegar.
  5. Pour the vinegar mixture over the pickles and onions; mix well.
  6. Transfer to containers, leaving 1/4-inch space at the top.
  7. Freeze the containers.
  8. Alternatively, can be stored in freezer bags.
  9. It takes 2 to 3 hours to thaw before serving.
