Ingredients

  • 3 egg yolks
  • 3 egg whites
  • dash of salt
  • 1/2 cup sugar
  • 1 (9 oz.) can crushed pineapple, drained
  • 2 Tbsp. lemon juice
  • 2 Tbsp. sugar
  • 1 cup heavy whipping cream

Instructions

  1. Beat egg yolks, salt, and 1/2 cup sugar until well combined.
  2. Add pineapple syrup and lemon juice to the mixture.
  3. Cook in a double boiler, stirring constantly, until thickened.
  4. Add the drained crushed pineapple to the mixture and mix well.
  5. Allow the mixture to cool completely.
  6. Whip the heavy cream until stiff peaks form.
  7. Fold the whipped cream into the cooled pineapple mixture.
  8. Pour into a suitable dish and freeze until firm.
