Ingredients

  • 1 1/2 lb. small potatoes, scrubbed and sliced into 1/4-inch pieces
  • 2 Tbsp. butter or margarine
  • 3 Tbsp. oil
  • 1 to 1 1/2 c. boiling water
  • 8 scallions, finely chopped
  • 6 sage leaves or 1/2 tsp. dried sage
  • 3 Tbsp. chopped fresh parsley
  • salt
  • pepper

Instructions

  1. Heat butter and oil in a large heavy skillet.
  2. Add the sliced potatoes; turn them to coat thoroughly in the butter and oil, then cook over medium heat for 20 minutes, turning often for even cooking.
  3. Carefully add 1 cup boiling water to the potatoes in the pan.
  4. Add the scallions, sage, parsley, and season with salt and pepper.
  5. Boil, uncovered, for 10 minutes until water evaporates.
  6. If potatoes aren't done, add 1/3 cup boiling water and cook for an additional 5 minutes.
  7. Serve at once.
