Ingredients

  • 1 c. cooked pumpkin
  • 1/2 c. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. ground ginger
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 c. chopped pecans
  • 4 c. vanilla ice cream, softened
  • 2 c. gingersnap cookie crumbs
  • kiwi for garnish

Instructions

  1. In a medium bowl, combine cooked pumpkin, sugar, salt, ground ginger, cinnamon, and nutmeg.
  2. Stir in chopped pecans.
  3. Fold the pumpkin mixture into softened vanilla ice cream until well blended.
  4. Mix gingersnap cookie crumbs into the ice cream mixture.
  5. Pour the mixture into a freezer-safe dish and freeze for at least 4 hours or until firm.
  6. Garnish with sliced kiwi and raspberries before serving.
