Ingredients

  • 2 16-oz. pkgs. frozen California mixed vegetables
  • 1 lb. Velveeta cheese, cubed
  • 2 cubes of butter or margarine
  • 2 tubes of Ritz crackers, crushed

Instructions

  1. Place the frozen vegetables in a large bowl and pour boiling water over them.
  2. Drain the vegetables thoroughly and transfer them into a greased 9 x 13 inch casserole dish.
  3. Melt 1 cube of butter and drizzle it over the vegetables.
  4. Add the cubed Velveeta cheese and distribute it evenly throughout the dish.
  5. Melt the remaining cube of butter and mix it with the crushed Ritz crackers.
  6. Cover the vegetables with the cracker mixture, spreading it evenly to the edges of the dish.
  7. Bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes, until bubbly and golden.
