Frozen Vegetable Casserole

- Place the frozen vegetables in a large bowl and pour boiling water over them.
- Drain the vegetables thoroughly and transfer them into a greased 9 x 13 inch casserole dish.
- Melt 1 cube of butter and drizzle it over the vegetables.
- Add the cubed Velveeta cheese and distribute it evenly throughout the dish.
- Melt the remaining cube of butter and mix it with the crushed Ritz crackers.
- Cover the vegetables with the cracker mixture, spreading it evenly to the edges of the dish.
- Bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes, until bubbly and golden.
