Fruit Cake Fingers

Sweet and nutty fruit cake fingers combine coconut, cherries, pecans, pineapple, and dates with a hint of almond flavoring, perfect as a rich snack or dessert for gatherings.

Ingredients

  • 2 small cans coconut
  • 1 can Eagle Brand milk
  • 1 tsp almond flavoring
  • 1/4 tsp salt
  • 1 cup cherries, cut up
  • 3 cups pecans, chopped
  • 1 cup fresh pineapple, cut up
  • 2 packages dates, cut up

Instructions

  1. Mix the almond flavoring and salt with the Eagle Brand milk.
  2. Pour the milk mixture over the coconut, cherries, pecans, pineapple, and dates, then mix thoroughly.
  3. Grease two 9 x 13-inch pans and line them with several layers of brown paper.
  4. Pour the mixture into the prepared pans.
  5. Bake at 250°F for 30 minutes, then increase the temperature to 275°F and bake for an additional 20 minutes.
  6. Allow the cake to cool before cutting into fingers or bars.
