Fruit Cake (Light)

Ingredients

  • 2 lb. fruit (dates, pineapple, etc.)
  • 1 lb. nuts
  • 1 lb. pecans
  • 1/2 lb. cherries
  • 4 eggs
  • 1 c. flour
  • 1 c. sugar
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 tsp. vanilla

Instructions

  1. Mix fruit and nuts together.
  2. (Do not chop.)
  3. Beat yolks and whites separately.
  4. Add vanilla to yolks.
  5. Pour yolks over the nut mixture slowly.
  6. Sift dry ingredients 3 times.
  7. Add dry ingredients and beaten whites to fruit and nut mixture.
  8. Put in oven at 250° for 1 1/2 hours.
  9. Do not preheat oven before putting cake in.
