Ingredients

  • 3 Tbsp. quick cooking tapioca
  • 2 Tbsp. sugar
  • 2 1/2 c. water
  • 1 (6 oz.) can frozen orange juice
  • 2 peaches, peeled and sliced
  • 1 orange, peeled and sectioned
  • 1 banana, peeled and sliced
  • 1/2 c. fresh strawberries
  • 1 Tbsp. lemon juice

Instructions

  1. Combine quick cooking tapioca, sugar, and water in a saucepan.
  2. Bring to a boil, then reduce heat and simmer until tapioca is transparent, about 10 minutes.
  3. Stir in frozen orange juice and cook for an additional 2 minutes.
  4. Allow the mixture to cool completely.
  5. Add sliced peaches, orange sections, banana slices, strawberries, and lemon juice to the cooled mixture.
  6. Mix well and chill in the refrigerator for a few hours before serving to enjoy frosty cold.
