Ingredients

  • 12 oz. flat wide egg noodles
  • 8 c. lightly salted boiling water
  • 1/4 lb. salted margarine
  • 2 apples peeled, cored, and diced
  • 3/4 c. plumped raisins
  • 4 eggs beaten
  • 2 capfuls vanilla
  • cinnamon sugar

Instructions

  1. Soak raisins in juice for 1 hour or overnight to plump.
  2. Preheat oven to 375°F.
  3. Cook noodles in boiling salted water for 5 to 10 minutes until tender.
  4. Drain noodles and place them in a large bowl.
  5. Add margarine, peeled, cored, and diced apples, and plumped raisins to the bowl.
  6. Add beaten eggs and vanilla to the mixture.
  7. Mix everything well until combined.
  8. Spoon the mixture into a well-greased 9 x 13-inch baking dish.
  9. Sprinkle with cinnamon sugar on top.
  10. Bake for 45 minutes until the top is brown and crisp.
  11. Cut into squares and serve hot or cold.
