A refreshing diabetic-friendly fruit salad featuring creamy vanilla pudding and Cool Whip, perfect for light, sweet, and satisfying treats suitable for all ages.

Ingredients

  • 3 c. buttermilk
  • 2 (9 oz.) boxes vanilla sugar-free instant pudding mix
  • 1 (8 oz.) carton Cool Whip

Instructions

  1. If using fresh fruit with canned fruit, drain canned fruit and combine the two.
  2. Mix buttermilk and pudding together until well combined.
  3. Fold in Cool Whip gently until smooth.
  4. Place half of the fruit in a bowl.
  5. Top with the pudding mixture.
  6. Add the remaining fruit on top.
  7. Serve chilled.
