  • 1 cup peeled and cubed calabaza or butternut or acorn squash
  • 3 tablespoons fresh lime juice
  • 2 teaspoons chopped fresh cilantro leaves

Instructions

  1. Drain the soaked red beans.
  2. Combine beans, water, and 1/2 teaspoon of salt in a saucepan.
  3. Bring to a boil, then reduce heat and simmer for 2 hours, adding water as needed to just cover the beans.
  4. When the beans are nearly done, sauté the pancetta or Canadian bacon for 3 to 4 minutes.
  5. Make a sofrito by adding garlic, chili, tomato, onion, and remaining 2 teaspoons of salt to the pan, then simmer for 5 minutes.
  6. Add the sofrito and cubed squash to the beans and cook uncovered for an additional 25 minutes, adding water as needed.
