Fruit Temptation Salad

Ingredients

  • 1/2 c. apple, unpeeled and cubed
  • 1/2 c. fresh pineapple chunks
  • 1/2 c. strawberries, sliced
  • 1/2 c. green grapes
  • 1/4 c. celery, chopped
  • 1 Tbsp. chopped pecans
  • 1 Tbsp. unsweetened apple juice
  • 1 Tbsp. plain nonfat yogurt
  • 1 Tbsp. mayonnaise
  • 4 lettuce leaves

Instructions

  1. Combine first 6 ingredients in a bowl.
  2. Toss gently.
  3. Combine apple juice, yogurt, mayonnaise and sugar, stirring with a whisk until smooth.
  4. Pour over fruit mixture. Toss well. Serve on lettuce lined plates.
  5. Serves 4.
