Ingredients

  • 1 large honeydew melon
  • 1 package (8 servings) watermelon flavored gelatin
  • 1 1/2 cups boiling water
  • 1/2 cup cold water

Instructions

  1. Cut the melon in half lengthwise and remove the seeds.
  2. Scoop out melon balls from each half, leaving the shells intact.
  3. Drain the melon balls well.
  4. Cut a thin slice from the bottom of each melon half to allow the shells to stand upright.
  5. Divide the melon balls between the melon shells.
  6. Dissolve the gelatin completely in boiling water in a large bowl.
  7. Stir in the cold water.
  8. Pour the gelatin mixture into the prepared melon shells.
  9. Refrigerate for 3 hours or until the gelatin is firm.
  10. Cut the filled melons into wedges and serve.
