A sweet and fruity rice salad combining pasta, maraschino cherries, pineapple, and mandarin oranges, perfect for hot summer days or casual gatherings with a refreshing twist.

Ingredients

  • 1/2 lb. rosamarina or orzo pasta
  • 8 oz. jar maraschino cherries
  • 3/4 cup sugar
  • 1 tablespoon flour
  • 2 eggs
  • 20 oz. cans crushed pineapple
  • 1 can mandarin oranges

Instructions

  1. Cook the pasta according to the package directions, then drain and set aside.
  2. Drain the maraschino cherries, reserving the juice. In a saucepan, cook the cherry juice with sugar, flour, and eggs until thickened.
  3. Mix the thickened cherry sauce with the cooked pasta and chill for 2 to 4 hours or overnight.
  4. Drain the crushed pineapple and mandarin oranges.
  5. Cut the oranges and cherries in half, then fold the fruit and Cool Whip into the chilled pasta mixture.
  6. Chill the assembled dish before serving.
