Ingredients

  • 1 (11 oz.) can mandarin oranges in light syrup
  • 1/4 teaspoon unflavored gelatin
  • 1 teaspoon lemon juice
  • 1/2 teaspoon lemon juice
  • 1 teaspoon poppy seed
  • 1/2 pound fresh spinach
  • 1 1/2 cups chopped red apple
  • 1/2 cup thinly sliced celery
  • 1/3 cup raisins

Instructions

  1. Drain the mandarin oranges, reserving 1/2 cup of the syrup.
  2. Combine 1/2 cup of the orange syrup and unflavored gelatin in a small, nonaluminum saucepan; let stand for 1 minute.
  3. Place over medium heat and cook for 2 minutes, stirring constantly until the gelatin dissolves.
  4. Remove from heat and stir in 1/2 teaspoon of lemon juice and poppy seed.
  5. Pour the dressing into a glass or stainless steel bowl and cover; chill for 3 hours.
  6. In a bowl, combine the drained oranges, remaining 1/2 teaspoon lemon juice, spinach, chopped red apple, sliced celery, and raisins; toss gently.
  7. Arrange the spinach mixture on six individual salad plates.
  8. Drizzle the chilled dressing evenly over each salad and sprinkle with sunflower kernels.
