Fruited Spinach Salad

- Drain the mandarin oranges, reserving 1/2 cup of the syrup.
- Combine 1/2 cup of the orange syrup and unflavored gelatin in a small, nonaluminum saucepan; let stand for 1 minute.
- Place over medium heat and cook for 2 minutes, stirring constantly until the gelatin dissolves.
- Remove from heat and stir in 1/2 teaspoon of lemon juice and poppy seed.
- Pour the dressing into a glass or stainless steel bowl and cover; chill for 3 hours.
- In a bowl, combine the drained oranges, remaining 1/2 teaspoon lemon juice, spinach, chopped red apple, sliced celery, and raisins; toss gently.
- Arrange the spinach mixture on six individual salad plates.
- Drizzle the chilled dressing evenly over each salad and sprinkle with sunflower kernels.
