Ingredients

  • 2 1/2 cups boiling water
  • 1 teaspoon salt
  • 1 1/4 cups yellow corn meal
  • 1 tablespoon shortening
  • 1/2 cup okra, chopped

Instructions

  1. Boil okra and salt for 3 minutes.
  2. Add remaining boiling water and sprinkle corn meal in slowly.
  3. Allow water to boil over meal a few minutes.
  4. Stir briskly to prevent lumping.
  5. When well combined, add shortening.
  6. Cover; steam about 5 minutes, stirring occasionally.
  7. Serve hot with steamed fish.
