Garlic-Spinach Chicken combines tender chicken breasts with flavorful garlic and spinach, baked in a creamy wine sauce, perfect for cozy family dinners or entertaining guests.

Ingredients

  • 2 (10 oz.) packages frozen chopped spinach, thawed
  • 6 to 8 boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 1/2 cups white wine or champagne
  • 6 to 24 cloves garlic, peeled
  • 1 teaspoon ground ginger

Instructions

  1. Drain the thawed spinach very well.
  2. Place the chicken breasts in a lightly greased 13 x 9 x 2-inch baking dish.
  3. Arrange 3/4 of the peeled garlic cloves around the chicken.
  4. Spread the drained spinach evenly over the chicken.
  5. Process the cream of chicken soup, white wine or champagne, remaining garlic, and ground ginger until smooth.
  6. Pour the mixture over the chicken and spinach.
  7. Cover the dish and bake at 350°F for 1 hour.
  8. Remove from oven, sprinkle with cheese, and bake uncovered until the cheese is melted.
