Genoese Cake is a rich, buttery sponge infused with Mandarin Marmalade and vanilla, perfect for citrus lovers and suitable for special occasions or teatime indulgence.

Ingredients

  • 2 c. sugar
  • 1 lb. butter, softened
  • pinch of salt
  • 1 c. Mandarin Marmalade
  • 3 3/4 c. sifted cake flour
  • 16 eggs
  • 1 vanilla bean
  • 2 Tbsp. Mandarin Napoleon (optional)

Instructions

  1. In a large pan, preferably copper, mix sugar, eggs, salt, and vanilla bean.
  2. Over very low heat, gently beat the ingredients with a whisk.
  3. This process can be done in a double boiler.
  4. When the mixture begins to foam and rise well up in the pan, remove from heat and continue whisking until the mixture is cold.
  5. Remove vanilla bean.
  6. Continue beating, gradually adding sifted cake flour, then whisk in softened butter.
