  • 1 lb. candied pineapple
  • 1 lb. candied cherries
  • 1 lb. candied raisins
  • 5 c. chopped pecans
  • 1 1/2 tsp. baking powder
  • 5 eggs
  • 1/8 c. orange juice
  • 1 c. sugar
  • 2 c. plain flour

Instructions

  1. Cream butter and sugar; add well beaten eggs.
  2. Add baking powder to flour, then sift twice.
  3. Add 1 cup flour to nuts and fruit.
  4. Add another cup of flour to creamed mixture.
  5. Mix thoroughly.
  6. Add lemon flavoring.
  7. Mix flour, nuts, and fruit together by hand.
  8. Add to creamed mixture, mixing well.
  9. Put into ungreased tube pan and place in cold oven.
  10. Put pan of water on bottom shelf.
  11. Bake at 325°F for 2 hours.
