Ingredients

  • 1 head red cabbage, cored and chopped in 1-inch pieces
  • 1 c. good wine vinegar
  • 1 c. dark molasses
  • 1 firm small white onion, peeled
  • whole cloves
  • 1 firm apple, peeled, cored and chopped
  • 1/2 c. red wine (optional)
  • salt (optional)

Instructions

  1. Heat the wine vinegar and dark molasses in a large pot until well combined.
  2. Add the peeled white onion, whole cloves, chopped apple, and optional red wine, bringing the mixture to a gentle simmer.
  3. Toss in the chopped red cabbage, cover, and cook over low heat for 30–45 minutes, stirring occasionally, until the cabbage is tender and flavorful.
  4. Season with salt to taste before serving.
