Ingredients

  • 1 to 2 large cabbage heads
  • 1 lb ground beef
  • 1 lb Italian sausage
  • 1 large onion
  • 3/4 cup rice
  • 1 (16 oz) can tomato sauce
  • 2 to 2 1/2 lb sauerkraut
  • salt
  • pepper

Instructions

  1. Boil cabbage heads until leaves look transparent, then remove from head and allow to cool.
  2. Cut out the thick vein from each leaf so it won't split during cooking.
  3. Mix together ground beef, Italian sausage, rice, chopped onion, minced garlic, salt, and pepper. Form the mixture into hot dog-shaped rolls just large enough to fit each cabbage leaf.
  4. Place each rolled mixture into a cabbage leaf, roll it up tucking in the sides, then place into a deep pot.
  5. Repeat the layering process: after a row is complete, top it with sauerkraut, then add another layer of cabbage rolls, and so on until the pot is full.
  6. Pour tomato sauce over the top, fill the pot with water enough to cover the cabbage rolls, cover with a lid, and cook for 2 to 4 hours.
