Ingredients

  • 1 lb. gherkin cucumbers
  • 5 slices ginger root
  • 1 hot red pepper
  • 3 Tbsp. sesame oil
  • 3 to 5 hot red peppers
  • 1 tsp. peppercorns
  • 2 Tbsp. vinegar
  • 2 Tbsp. sugar

Instructions

  1. If you like a milder pickle, remove seeds from red hot peppers.
  2. Combine gherkin cucumbers, shredded ginger, shredded hot red pepper (if using), sesame oil, vinegar, sugar, peppercorns, and hot red peppers in a jar or bowl.
  3. Mix well to ensure all ingredients are evenly coated.
  4. Let the mixture sit for at least 30 minutes to allow flavors to meld before serving.
