- Cover bottom of Dutch oven with olive oil.
- Chop garlic. Saute carrots, onion, celery and garlic.
- Add tomatoes, water, beans and zucchini.
- Simmer for 1 hour or until veggies are cooked.
- Season with basil, parsley, oregano, salt and pepper.
