Ingredients

  • 3 potatoes, sliced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 lb. fresh green beans
  • 1 large can crushed tomatoes
  • 1 onion
  • 3 cloves garlic
  • 1 zucchini

Instructions

  1. Cover bottom of Dutch oven with olive oil.
  2. Chop garlic. Saute carrots, onion, celery and garlic.
  3. Add tomatoes, water, beans and zucchini.
  4. Simmer for 1 hour or until veggies are cooked.
  5. Season with basil, parsley, oregano, salt and pepper.
