Ginger Beer

A refreshing homemade ginger beer with a spicy kick and citrus flavor, perfect for those who enjoy fizzy, naturally fermented beverages with a hint of heat.

Ingredients

  • 2 lb. granulated sugar
  • 2 chillies
  • 3/4 oz. compressed yeast
  • 3 or 4 lemons
  • 3 qt. boiling water
  • 4 qt. cold water

Instructions

  1. Dissolve the yeast in a little warm water with a teaspoon of sugar.
  2. Place the sugar, chillies, the thin rind of the lemons, and lemon juice in a large pan.
  3. Pour over the 3 quarts of boiling water.
  4. Add the cold water when all the sugar has dissolved.
  5. Add the yeast mixture to the pan.
  6. Allow to stand for 24 hours.
