Ginger Mandarin Frosting

A luscious ginger-mandarin frosting layered over sponge cake, blending spicy preserves with sweet marmalade, topped with whipped cream and nuts for a delightful treat.

Ingredients

  • 1 baked sponge cake or angel food cake
  • 2 tsp ginger preserves
  • 1 cup heavy cream
  • 1/2 tsp vanilla extract
  • 4 Tbsp Mandarin marmalade
  • 1/4 cup confectioners sugar
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. Stir ginger preserves and marmalade together until soft.
  2. Split the cake into 2 layers.
  3. Spread half of the ginger and marmalade mixture over the bottom layer of the split cake.
  4. Beat heavy cream with confectioners sugar and vanilla extract until stiff peaks form.
  5. Spread half of the whipped cream over the ginger and marmalade layer and sprinkle with chopped pecans or walnuts.
  6. Place the top layer of the cake on top and repeat the layering with ginger mixture, whipped cream, and nuts.
