Ginger Oatmeal Crisps

Ingredients

  • 2 eggs
  • 34 cup sugar or 34 cup Splenda sugar substitute
  • 14 teaspoon ground ginger
  • 12 teaspoon vanilla
  • 14 teaspoon salt
  • 1 tablespoon butter, melted
  • 2 teaspoons baking powder
  • 1 34 cups quick-cooking oats

Instructions

  1. Heat oven to 350 degrees.
  2. In a large bowl beat eggs until frothy.
  3. Add sugar, ginger, vanilla and salt; mix until sugar is dissolved, about 2 minutes longer.
  4. Blend in butter and baking powder, then fold in oats.
  5. Cover a large cookie sheet with ungreased foil.
  6. Drop the batter onto sheet in rounded teaspoonfuls spaced 2" apart.
  7. Bake in center of oven until the edges are golden brown, 10 to 12 minutes.
  8. remove from pan while hot and cool on a rack.
  9. Repeat with remaining batter.
