Ingredients

  • 1 boneless pork roast
  • 1 Tbsp ginger
  • 3/4 c three fruit Bundee marmalade
  • 2 tsp rosemary
  • 1 c wine
  • salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the pork roast in a pan and sprinkle with salt, pepper, rosemary, and ginger.
  3. Pour 1 cup of wine into the pan.
  4. Cook and bake for 1 hour.
  5. Remove the pan from the oven.
  6. Place the marmalade in a small bowl.
  7. Add the pan drippings to the marmalade and mix well.
  8. Pour the marmalade mixture over the meat.
  9. Cook for an additional 30 to 40 minutes, basting the meat occasionally.
  10. Serve the pork with the pan juices.
