Gingered Lime Gelatin

Ingredients

  • 20 oz. can pineapple tidbits
  • 6 oz. pkg. lime gelatin
  • 1 1/2 c. boiling water
  • 1 c. ginger ale, chilled
  • 1/4 tsp. ground ginger

Instructions

  1. Drain pineapple, reserving juice; set the pineapple aside.
  2. In a bowl, dissolve the lime gelatin in boiling water.
  3. Stir in chilled ginger ale, ground ginger, and the reserved pineapple juice.
  4. Chill until syrupy, about 45 minutes.
  5. Fold in the pineapple pieces.
  6. Transfer the mixture to a 6-cup mold coated with nonstick cooking spray.
  7. Refrigerate until the gelatin is firm.
  8. Unmold onto a serving platter.
