Ingredients

  • 2 medium acorn squash, quartered (unpeeled)
  • 6 Tbsp. butter or oleo, melted
  • 1/3 cup fresh orange juice
  • 3 Tbsp. honey
  • 1/8 tsp. ground cinnamon
  • 1/8 tsp. ground ginger
  • 1/4 tsp. salt

Instructions

  1. Place the quartered acorn squash in a shallow baking dish.
  2. Combine melted butter, orange juice, honey, ground cinnamon, ground ginger, and salt.
  3. Pour the mixture over the squash; cover the dish.
  4. Bake in a 350°F oven for 30 minutes until almost tender.
  5. Baste the squash several times with the pan juices during baking.
  6. Uncover the dish and baste again.
  7. Bake for an additional 10 to 15 minutes until the squash is tender and glazed.
