Ingredients

  • 1 (9-inch) baked pastry shell
  • 1 1/2 qt. fresh strawberries
  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • 1/2 c. water
  • 1 Tbsp. margarine

Instructions

  1. Place 1 quart of fresh strawberries in the cooled pastry shell.
  2. Crush the remaining berries in a medium saucepan.
  3. Add sugar, cornstarch, and water to the saucepan, blending well.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
  5. Boil and stir for 2 minutes.
  6. Add margarine to the mixture.
  7. Stir until well blended.
  8. Strain the mixture and let it cool before pouring over the strawberries in the pastry shell.
