Ingredients

  • 4 large chicken breast halves
  • salt and pepper
  • 1 cup orange juice
  • 3 tablespoons brown sugar, packed
  • 3 tablespoons soy sauce
  • 4 garlic cloves, minced
  • 1.5 teaspoons ground ginger
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place chicken breast halves skin side up in a 7 x 12-inch metal pan.
  3. Season the chicken with salt and pepper.
  4. Combine orange juice, brown sugar, soy sauce, minced garlic, and ground ginger in a bowl and stir until sugar dissolves.
  5. Pour the orange sauce mixture over the chicken.
  6. Bake the chicken for 35 minutes.
  7. Remove the chicken from the pan and set aside.
  8. Stir the dissolved cornstarch mixture into the pan juices and bring to a boil over high heat to thicken.
  9. Return the chicken to the pan, turning to coat with the glaze.
  10. Increase oven temperature to 450°F (230°C).
  11. Bake the chicken for an additional 10 minutes.
  12. Serve the glazed chicken over rice, garnished with a broccoli stalk if desired.
