Ingredients

  • 4 chicken breasts
  • 1 Tbsp vegetable oil
  • salt
  • 1 large garlic clove, pressed and minced
  • 1/2 cup chopped onion
  • 1 tsp ground ginger
  • 1 (20 oz) can pineapple slices
  • 1/4 cup juice from can of pineapple
  • 2 Tbsp cornstarch
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 2 Tbsp honey

Instructions

  1. Brown chicken breasts in vegetable oil and season with salt.
  2. Add pressed garlic, chopped onion, and ground ginger; sauté until fragrant.
  3. Drain pineapple slices and set aside the juice.
  4. Mix 1/4 cup pineapple juice with cornstarch to create a slurry.
  5. Combine remaining pineapple juice with chicken broth, soy sauce, honey, and cinnamon.
  6. Pour the sauce mixture over the browned chicken.
  7. Simmer covered for 30 minutes until the chicken is tender.
  8. Stir in the cornstarch slurry and cook until the sauce thickens.
  9. Add the pineapple slices to the dish and cook briefly before serving.
