Instructions
- Lentils need no soaking.
- Bring to a boil 3 cups of salted water and slowly add 1 cup dry lentils so as to not disturb boiling point.
- Cover and reduce heat to simmer.
- Cook for 1 to 1 1/2 hours until done.
- If cooked lentils need to be drained, save the liquid to serve as a base for soup, gravy or stew.
- One cup dry lentils yields 2 cups cooked.
